Cooking a large batch of rice is a common way to save time during busy weeks. Many people simply refrigerate the leftovers and reheat them later. While this can be perfectly safe, how you store the rice is just as important as how long you keep it.
Why can cooked rice become unsafe?
Unlike many people think, the biggest concern isn’t the rice itself—it’s a bacterium called Bacillus cereus. These bacteria can naturally be present in uncooked rice as spores that survive the cooking process.
If cooked rice is left at room temperature for several hours, the spores can grow into bacteria and produce toxins. Some of these toxins are heat-resistant, meaning that reheating the rice later may kill the bacteria but won’t destroy the toxins they already produced.
This is why food poisoning from rice is often linked to improper storage, not poor cooking.
How long does cooked rice last in the refrigerator?
When stored correctly in a refrigerator at 40°F (4°C) or below, cooked rice is generally safe for 3 to 4 days.
To keep it safe:
* Cool the rice as soon as possible after cooking.
* Refrigerate it within 1–2 hours (or within 1 hour if the room is very hot).
* Store it in a clean, airtight container.
* Avoid leaving it on the kitchen counter for long periods.
